Ingredients


  • 1 tbsp vegetable or grapeseed oil
  • 1 large white onion, finely chopped
  • 2 pounds SunFed Ranch 100% Grass Fed 80/20 ground beef
  • Kosher salt and freshly ground black pepper (to taste)
  • Two 10-oz cans mild diced tomatoes and green chiles, undrained
  • Two 26-oz cans Southwestern-style beans, undrained
  • One 10.25-oz bag corn chips
  • 2 cups Cheddar cheese; mild, medium or sharp (about 8 oz)

Instructions


  1. In a large soup pot or Dutch oven, heat the oil over medium heat until hot. Add the onion and sauté until translucent and tender, about 8 minutes
  2. Add the ground beef and a few pinches of salt and pepper and cook, stirring often to break up the meat until browned, 6 to 7 minutes
  3. Stir in the tomatoes and beans along with their juice. Reduce heat and simmer, stirring occasionally, for 30 minutes. Taste and adjust the seasoning.
  4. Ladle the chili into bowls and top with corn chips and grated Cheddar.
  5. Extra napkins optional, but recommended
