Ingredients


  • 5 lbs of 80/20 gb
  • 1 bunch Italian parsley
  • 1 tablespoon anise seed or fennel
  • ½ cup pecorino
  • ½ cup parmesan
  • 4 eggs
  • Whole loaf of French bread, crust removed, chopped into cubes (use day-old or dry the cubes in the microwave)
  • 1-2 tablespoons salt (to taste)
  • 1 tablespoon freshly ground black pepper

Instructions


  1. Soak bread cubes in water, then squeeze out the water
  2. Add all ingredients to large bowl, gently combine until well-mixed
  3. Form meatballs by hand or use ice cream scooper
  4. Place meatballs on foil-covered pan sheet
  5. Cook under broiler on high for 9-12 minutes; keep an eye on them and turn if/as needed
