Preheat oven to 325 degrees Farenheit.
Season the roast with salt and pepper and dredge with flour.
In a large Dutch oven, heat 2 tablespoons olive oil over medium heat.
Sear on each side until golden brown in color.
Place in the oven for 2½ hour, until the meat is fork tender or about 100 degrees Farenheit internally.
